Happy Muffin Tin Monday!
Today we read the Usborne book In The Nest by Anna Milbourne. This book has great illustrations and is easily understood by preschool and kindergarten aged children. The story follows a little bird as she builds her nest, lays her eggs, takes care of the eggs and then the babies with the daddy bird. It also shows a few other places that birds may nest.
So today we made a muffin tin lunch full of lots of little nests. First we had a shredded mozzarella cheese nest with a cheese bunny. I turned the liners inside out so L could see the grass and eggs. I also made a nest for her using left over chicken lo mein noodles with paper egg accents and ducky chopsticks.
Next we made a nest out of Cheetos with more paper eggs and an applesauce nest with grape eggs.
Finally, L got a yogurt nest with sprinkle eggs and a cupcake nest with Cabury eggs on top. The only thing in the lunch L didn't like were the big sprinkles. She asked if she could have the same thing next week.
We made the cupcakes this morning and just like eggs have a surprise inside, so do these treats. These are very simple to make. I just used boxed white cake mix and then divided the batter into 4 bowls. We added a different color of food coloring to each bowl. Using a tablespoon L alternated the colors to make these spring rainbow cupcakes.

Why have I never thought of turning the papers inside out? Brilliant! I love the cupcakes too- thanks for sharing the how-to!
